Afterward, pass the mixture through a sieve to remove any clumps, ensuring a fine, airy powder; (3)Fillings Blending : Traditionally, fillings include diced pork fat (marinated with a pinch of salt), sesame seeds, red dates,etc. Nowadays, modern twists like salted egg yolk, purple rice, and taro paste have joined the repertoire. Gently fold these fillings into the rested rice flour; (4)Feeding & Steaming: Line a steamer with a damp cheesecloth. Evenly sprinkle the flour mixture into the steamer, a traditional wooden mold in shapes of octagons, circles or flower petals (Do not press the mixture down to keep it airy). Steam over high heat for 15–25 minutes, depending on the thickness; (5)Unmolding & Consuming : Once the cake is steamed to perfection, invert the steamer to unmold the cake.
